Kids Eats: Baby Donuts

There are two things my little one is obsessed with right now: 1.  mothering everything in sight  2.  watching baking tutorials on youtube.  I came across this rather amazing recipe on Sprinkle Bakes and immediately knew that she would love to make these tiny, baby donuts.  Luckily for everyone’s waistline, they are baked and not deep fried.  I don’t think I could trust her around a deep fryer.  Though at times a little messy, baking with my kids has become one of our favorite past times. Cooking with mama is fun but baking, well baking is just guaranteed goodness.

You will need this mini-donut baking pan to get started.

This can be the messy phase.  To avoid getting batter everywhere but the pan, it is recommended to use a piping bag.  I went ghetto-style and used a storage size ziploc bag for my batter and a sandwich size one for the kidlets.

Donut batter:

2 cups all purpose flour, sifted
3/4 cup granulated sugar
2 tsp. baking powder
1/2 tsp. salt
3/4 cup buttermilk
1 tsp. vanilla extract
2 eggs, lightly beaten
2 tbsp. butter, melted
Seeds from one vanilla bean

Preheat oven to 425°F. Spray donut pan with nonstick cooking spray.

In large mixing bowl, sift together all purpose flour, sugar, baking powder and salt. Add buttermilk, eggs, vanilla extract, vanilla seeds and butter and beat until just combined. Spray donut cavities with cooking spray or brush with butter.  Fill each donut cup approximately 1/2 full.

Bake 5-8 minutes or until the top of the donuts spring back when touched. Let cool in pan for 4–5 minutes before removing. Finish donuts with vanilla glaze. Donuts are best served fresh.

Awww, how sweet.  Newborn donuts.  They will be even sweeter frosted…

Vanilla glaze:
1 cup confectioner’ s sugar
1 tbsp. milk
½ tsp. vanilla extract
4 drops of liquid blue food coloring
White nonpareils

In small bowl, stir together sugar, milk and vanilla extract until sugar is completely dissolved. Add food coloring and stir until color is uniform.  Use immediately to glaze donuts.  Sprinkle on nonpareils.

Light and fluffy perfection.  Get baking!
